Now that stews are back on the stove, many of you might think that Italians always cook their meat in tomato sauce, but that is not true.

That is why I put together these Italian meat dishes braised without any tomato, each one giving the meat its flavour in a different way.

Without tomato covering everything, you taste the meat itself along with whatever it is cooked in.
