- Roman Banquets: Power and Opulence
In ancient Rome, lavish banquets were bold displays of dominance and wealth, with extravagant spreads designed to impress and assert power.
- Medieval Feasts: From Power to Diplomacy
By the 13th century, banquets became more meaningful social events, fostering camaraderie and diplomacy. Meals served as opportunities for negotiation and relationship-building, transforming food into a tool for connection rather than dominance.
- French Service: Inequality and Waste
In the 16th century, French service introduced elaborate dining displays where all dishes were presented at once. However, this style perpetuated inequality: the most sumptuous dishes were placed near the most distinguished guests, often out of reach for others. Guests served themselves without order, leading to significant food waste.
- Russian Service: Refinement and Elegance
By the 19th century, Russian service replaced French service, prioritizing refinement. Dishes were served one course at a time, freshly prepared and hot, ensuring quality and reducing waste. This approach set the stage for modern fine dining.
