Southern Italian dishes you can make ahead before you go to the beach

In the south of Italy, summer cooking starts early in the morning when the temperatures are still manageable.

You assemble the dish, set it aside, and spend the hot hours at the beach.

In the evening, you bake or fry it in a few minutes and dinner is ready.

Here are some of my favourites for a southern Italian summer evening.
