Outside Italy, a panino usually means something pressed, toasted, and filled with the same three ingredients at every café.

In Italy, panino simply means bread with a filling, and the bread is what matters.

From piadina in Emilia-Romagna to ciambella in Calabria, every region has its own bread and its own way of filling it.

The tradition changes every 100 kilometres, and so does the result.
